Quick Dinner: Shrimp with Lemon Pepper Pasta

1 lb Shrimp (shell off)
Lemon Pepper Pasta
2 garlic cloves minced
black pepper
Salt

Olive oil

Pasta
Boil pasta for 8 minutes
Drain pasta in colander
Mix with 1-2 teaspoon olive oil

Shrimp
Heat oil in pan with minced garlic
Add shrimp to pan and top with salt and pepper
Turn and add more salt & pepper
Remove from oil and add to pasta
Toss pasta and shrimp

Top with grated Parmesan cheese if desired

This is one of those meals that looks more involved than it really is. I really like those kinds of meals. I threw this together 23 minutes before dinner time! Of course the picky little eaters had PB&J instead, but Big Daddy and I ate well.

Karin,
This looks super-dee-dooper delicious. Glad it was quick. Will make a great dinner those nights when Chinese delivery doesn't deliver.

Ah - and I posted a rambly blog post about the Derby today. Little education and a lot of everything else in my post, I forewarn.

it has been a long time since we tried flavored pasta.

that looks much healthier than our usual linguini with alfredo sauce and shrimp. i love quick cooking!
